Spray cold waffle iron with Pam and preheat to between 400 and 425 degrees. Remove batter from refrigerator and allow to sit at room temp for 20 minutes. Stir batter with spatula to gently deflate it. Using a #6 ice cream scoop, fill the waffle iron with batter (the it will spread and rise). Cook for allotted time per manufacturer's instructions until waffle is crispy. Repeat with remaining 3 waffles respraying iron as needed.
Serve hot waffles immediately with warmed cinnamon syrup, sweetened whipped cream and fresh fruit.
In a large glass or ceramic bowl, combine the milk and melted butter. Whisk in eggs & honey. Combine with flour, yeast & salt and whisk until smooth. Cover with plastic wrap and refrigerate overnight.
Warm maple syrup and cinnamon stick in saucepan over medium heat. Bring to low boil and lower heat to simmer for about 10 minutes. Remove cinnamon stick before serving.
