Baked Fruit Crepe wth Brulee Sauce

  • 3/4 cup flour
  • 3/4 cup milk
  • 4 large eggs
  • 1/4 cup brown sugar
  • 1/4 cup gran.sugar
  • 2 teaspoons gr.cinnamon
  • 2 pears or peache seasonal fruit-pears or peaches


  1. Whisk together flour,milk and eggs(let stand for 10 minutes).In separate bowl,mix together next three ingredients.Put 2 tblsp of butter in 2 9 inch glass pie pans which have been sprayed with non-stick spray.Melt butter for 35-40 microwave.
  2. Preheat oven for 450 degrees F.Whisk batter and divide into buttered pie pans.Slice fruit thinly and arrange in circle over batter.Bake for 10-12 minutes until firm and beginning to puff.
  3. Remove crepe from oven and loosen with knife.Place dinner plate on top of pie pan and holding with hot pads flip onto plate.Put 2 tblsp.butter into hot pie pan and allow to melt.Sprinkle half of sugar and cinnamon mix over melted butter.Slide fruit crepe off plate and back into pie pan. Crepe can be held at this point for 1/2 hour until final bake.
  4. Bake in 450 oven for 8-10 min.or until the crepe puffs up.Remove from oven,invert onto plate again.Use spatula to get all the brulee sauce from the pie plate,drizzling over top of crepe.
  5. Cut in half and serve on warmed plate with sausage and a fruit garnish(half of a strawberry,orange slice,etc).
