Ingrédients

  • 2 cups sugar
  • 1 1/2 cups chopped pecans
  • 1/2 cup butter
  • 3 cups flour
  • 1/2 cup warm vegetable oil
  • 2 teaspoons soda
  • 1 1/2 teaspoon vanilla
  • 1/2 teaspoon salt
  • 4 well beaten eggs
  • 6 overly ripe bananas
  • 1 1/2 cups raisins

  1. Cream sugar, warm oil and butter together.
  2. Add eggs and vanilla, whipping into a batter.
  3. Sift four, soda and salt and add to batter.
  4. Smash bananas together and add to mixture along with raisins and nuts.
  5. Bake in standard sized loaf pans in preheated 300 degree oven for 1 1/2 hours. Make sure cake has pulled away from the sides. The knife test is tricky as you may run into a banana. Also, adjust cook time if using dark cookware. It will bake faster by about 15 minutes.
