Cranberry Walnut Bread

  • 2 eggs
  • 1 1/4 cups sugar
  • 1 1/2 teaspoon vanilla
  • 1 1/2 sticks unsalted butter
  • 1 1/2 cups bread flour
  • 1 1/2 cups dried or whole fresh cranberries
  • 1 1/2 cups coarsely chopped walnuts


  1. Beat eggs and sugar with electric mixer at medium speed until light yellow and thickened. Beat in melted butter and vanilla
  2. On low speed, thoroughly mix in flour
  3. Add cranberries and chopped walnuts Stir mixture to combine all ingredients ( the texture will be similar to lumpy mashed potatoes )
  4. Place rack at middle position Preheat oven to 350 degrees F Generously grease and lightly flour a loaf pan
  5. Spoon batter into the prepared pan and smooth top with a rubber spatula. Bake for about 1 hour 15 minutes until firm and golden brown. THIS IS BEST IF SERVED THE NEXT DAY
