Ingrédients

  • 1 Zucchini
  • 1 Eggplant
  • 1 Each, Red, Yellow and Green Pepper
  • 1 Spanish Onion
  • 2/3 cup Olive Oil
  • 1/3 cup Balsamic Vinegar
  • 2 Cloves of Garlic, finely chopped
  • 1/2 cup Crumbled Goat Cheese

  1. Slice Zucchini and Eggplant in long, thin slivers, slice peppers in thick slivers and slice onion in thin rounds.
  2. Put vegetables in large ziplock bag
  3. mix oil, vinegar and garlic, pour into bag, lock and shake
  4. Grill vegetables
  5. serve with goat cheese crumbled on top.
