Curry Cauliflower Soup

  • 4 tablespoons Unsalted butter
  • 1 cup Onion, chopped
  • 2 Granny smith apples, peeled, seeded, chopped
  • 1 Cauliflower head, broken into florets
  • 2 tablespoons Madras Curry powder
  • 1 cup White Wine
  • 4 cups Vegetable or Chicken broth
  • 1 dash Salt and pepper


  1. In 6 quart saucepan add butter, onion and apple and cook on medium heat until onion is soft and translucent. Add cauliflower and curry. Cook 5 minutes, add wine.
  2. Simmer until wine is almost dissolves, add stock. Simmer until cauliflower is tender.
  3. Puree in blender until smooth. Adjust seasoning to taste
  4. Garnish with fresh granny smith apple.
