MASHED SWEET POTATOES WITH OLIVE OIL CARAMLIZED ONION AND SAGE

  • 4 Sweet Potatoes
  • 8 tablespoons Alta Cresta Orchard's Italian Blend Extra Virgin Olive Oil
  • 2 Yellow onion, thinly sliced
  • 8 leaves Fresh Sage leaves, chopped

  1. Place diced sweet potatoes in a saucepan, salt and cover with water. Bring to a boil and cook potatoes until tender.
  2. While the sweet potatoes are cooking, heat 8 Tbs. of olive oil in a skillet and brown onions and fresh sage until caramelized (approximately 10 minutes).
  3. Drain sweet potatoes, return them to the saucepan and mash.
  4. Stir in the caramelized onions, sage with olive oil, salt and pepper to taste.
  5. Transfer to serving bowl, drizzle with remaining olive oil and serve.
