Perfect Pumpkin Bread French Toast

  • 1 can Canned Unsweetened Pumpkin
  • 1 cup White Sugar
  • 6 Eggs
  • 1/2 cup Canola Oil
  • 1 3/4 cup All Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Baking Powder
  • 1 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Cloves
  • 1/4 teaspoon Ginger
  • 1/2 teaspoon Salt
  • 1 cup Milk


  1. Heat the oven to 350 degrees. Grease and lightly flour a loaf pan. In a large bowl beat together the pumpkin, sugar, oil, and 2 eggs. Sift flour, baking soda, baking powder, 1/2 tsp. cinnamon, nutmeg, ginger, cloves and salt into the bowl and mix together all ingredients. Pour into prepared pan. Bake for 60 minutes or until the top is lightly browned and knife inserted into the center comes out clean. Remove from oven and cool and refrigerate overnight.
  2. Heat griddle or frying pan on medium to medium-low heat. Slice bread into 1 inch slices. Wisk together 4 eggs, 1 tsp. cinnamon and milk in a shallow bowl. Briefly soak pumpkin bread in egg mixture.  Coat both sides but do not let the bread sit in the mixture for more than a few seconds. Place coated bread slices on hot greased griddle and cook until golden brown, 2-3 minutes per side.  Sprinkle with powdered sugar, and serve with New York maple syrup.
