Bananas Foster Waffles

  • 6 bananas, slightly speckled
  • 3/4 sugar
  • 8 oz (1 stick) butter
  • Your favorite waffle recipe plus 1/2 c finely chopped pecans


  1. Banana Sauce: Put 3/4 c sugar and 1 stick of butter into a heavy 12" fry pan over med heat. Peel and halve bananas lengthwise and quarter. Add gently to the now bubbling sugar/butter mixture. Shake the pan and allow the ingredients to blend and swirl but do not stir. Once mixture turns a golden caramel color, remove immediately from heat and add to med bowl. Cover w foil until ready to plate. Warm a small pitcher of maple syrup to serve alongside.

Additional Tips

If caramel mixture begins to harden, add a little water and swirl. Immediately remove from heat and cover with foil until waffles are finished. No matter what waffle recipe you are using, beat the egg whites to soft peaks before added to the waffle batter. This makes for lighter waffles. To plate, put two quarters of banana on the plate first, then the hot waffle - this keeps the bottom sides from becoming soggy. Top the waffles by dividing remaining topping evenly. Add whip cream if desired.
