Italian Sausage Strata

  • 1 day old loaf of french bread
  • 1 lb Mild Italian bulk Sausage
  • 1/4 lb baby bella mushrooms, chopped
  • 1 cup red roasted peppers, diced
  • 1/4 cup finely diced onions
  • 3 fresh garlic cloves minced
  • Salt and pepper to taste
  • 6 eggs, beaten
  • 2 cups half and half
  • 1 teaspoon paprika
  • 1 tablespoon dijon mustard
  • 1 teaspoon crushed red pepper
  • 2 cups shredded mozzarella
  • fresh cut scallions for garnish


  1. Preheat your oven to 375 degrees. Dice your french bread into 1 inch cubes and add to a large mixing bowl. In a large greased skillet, saute the Italian sausage until browned then add the mushrooms, garlic and onions and cook for 3 minutes. Then add the roasted peppers and crushed red peppers and continue to saute for an additional 2 minutes. Spoon the mixture over the bread and toss together.
  2. In a large bowl, mix the eggs, half and half, mustard and paprika. Pour over the bread mixture and lightly toss until everything is evenly combined. Spray a 13 x 9 inch baking dish and spoon in the mixture. Once it is all in gently press it all down so a little bit of batter moves to the top.
  3. Bake in the oven uncovered for 45 minutes or until golden brown on top. Remove from oven and spread mozzarella on top and cover and let sit for 5 minutes. Uncover, slice and serve with fresh scallions for garnish.
