Crunchy Pecan French Toast

  • 1 egg
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 cup sugar
  • 1 tablespoon melted butter
  • 1/2 cup chopped pecans
  • 1/2 cup crushed corn flakes
  • 2 slices French or Italian bread, cut 3/4 inch thick
  • sweetened strawberries or topping/syrup of choice


  1. In a bowl, beat egg, nutmeg and cinnamon together. Add vanilla, sugar and melted butter, stir well; pour mixture into a shallow dish.
  2. Place pecans and corn flakes in separate shallow dishes. Dip bread slices into egg mixture on both sides then press into pecans and cornflakes, one on each side.
  3. On a griddle, melt butter and cook slices slowly over low heat for about 3 minutes per side or until golden brown. Serve with sweetened fruit topping or syrup of choice.
