Green Tomato Cake

  • 4 cups Diced Green Tomatoes
  • 1 tablespoon Salt
  • 1/2 cup Softened Butter
  • 2 cups Sugar
  • 2 Eggs
  • 2 cups Flour
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 3/4 cup Mixed Craisins, Raisins, and Dried Cherries
  • 1/2 cup Nuts
  • 1/3 cup Coconut


  1. Preheat oven to 350 Degrees and grease a 9x13 pan.
  2. Place diced tomatoes in a bowl and add 1 tablespoon salt. Set aside for 10 minutes. Rinse well in a colander with cold water and drain.
  3. In a large bowl, cream butter and sugar. Add eggs and beat well.
  4. In a medium bowl, combine flour, cinnamon, nutmeg, baking soda, and 1/4 teaspoon salt. Add raisins, craisins, dried cherries, and coconut. Mix Well
  5. Add dry ingredients to creamed butter, sugar and eggs. Mix well. Add tomatoes and mix. Pour into pan and bake for approx. 40 minutes. Cool and dust with powdered sugar & Serve.
