Green Chili Strata

  • 3 10 inch flour tortillas
  • 1 cup grated medium cheddar
  • 3 cups grated monterry jack cheese
  • 1 13 oz Bueno mild frozen green chili or drained chopped Hatch canned green chili
  • 2 1/2 cups milk
  • 6 eggs
  • 1 teaspoon salt
  • 1/2 teaspoons pepper


  1. Butter 10X12 oven safe casserole and cover the bottom with a single layer of flour tortillas. Mix cheese together. Place 1/2 of cheese and 1/2 chili in dish, layer evenly. Beat eggs, milk, salt pepper and pour over. Place remaining cheese and chili. Let sit in refrigerator over night.
  2. Bake at 350 deg. for 45 min. then 250 for 15 min. Strata is done when firm to touch. Let sit 5 min. Garnish with sour cream, chives and black olives. You may add finely chopped ham or bacon to taste.
